I was born and raised in New York, which means as an East Coaster, I never had the luxury of driving to an In-N-Out drive-through whenever the cravings hit. And then, to make matters more difficult for myself, I went vegan at 18 years old. Unfortunately, In-N-Out doesn't have any vegan options on the menu besides regular fries. But that didn't stop me from getting my fix... I took matters into my own hands by recreating one of the most famous In-N-Out menu items that not only matches the real thing, but can be made 100% oil-free by using my vegan Cheese Sauce recipe in place of store-bought vegan cheese.

RECIPE
Yields 8-9 servings
Ingredients
1 batch The Best Oven-Based Fries
1 batch Oil-FreeThousand Island Sauce (listed below)
2 large yellow onions, diced
1/4 teaspoon sea salt
1/8 teaspoon black pepper
1-1 1/2 cup shredded vegan cheese (or oil-free Cheese Sauce)
Oil-Free Thousand Island Sauce
3 tablespoons ketchup
3 tablespoons dill relish
1 teaspoon cane sugar
1 teaspoon apple cider vinegar (or regular vinegar)
Instructions
As the fries bake as per The Best Oven-Baked Fries recipe instructions, caramelize the onions by adding the diced onions to a pan with a splash of water, salt, and pepper. Stir occasionally and add a tiny splash of water to de-glaze the pan every now and then.
Make the Thousand Island Sauce by adding all of the ingredients in a bowl and mixing until well-combined.
Once the fries are done, remove from the oven and combine the fries onto one pan. Add the cheese or cheese sauce and place the tray back into the warm oven to heat and melt the cheese. Remove from the oven once warmed and melted.
Add the Thousand Island Sauce and top with the caramelized onions.

Enjoy!
